Whole dates for retail, dates for foodservice and date material for processing can require different grading, presentation, handling and documentation. The buyer should first define the sales channel or manufacturing application.
Whole dates: define the product
A useful whole-date brief identifies the required variety or acceptable alternatives, intended grade or size expectation, moisture or texture preference, certification, packaging and destination. Photographs alone are not a specification.
Date ingredients: choose by function
Date paste
Paste may contribute fruit solids, binding, body and date character. Consistency and process behaviour matter alongside sweetness.
Date syrup
Syrup is a liquid system whose colour, flavour, viscosity and analytical profile must fit the intended beverage or food application.
Date powder
Powder is a dry date format. Particle profile, moisture behaviour, solubility expectations and processing conditions should be considered in the complete formulation.
Documentation should match the proposed supply
Buyers should request the current product specification, certification status where required, shelf-life and storage information, packaging details and batch or quality documentation applicable to the transaction. Certification should never be assumed across every product.
